This quick ‘n’ easy piquant pea & leek soup is made with just five everyday ingredients, and is as delicious as it is beautiful to look at! It requires no fancy-schmancy techniques, and is pretty much guaranteed to be loved by all.

It is green my Lord!

“Oh, Edmund… can it be true? That I hold here, in my mortal hand, a nugget of purest Green?”

Of course, were Lord Percy to have dipped into a cauldron of my easy-peas-y piquant (pea-quant… yeah, I’m on a roll) pea soup, he would have been enthusing about a bowl of purest green instead. And quite rightly so, for this deliciously warming pea soup is the stuff of legend. Honest.

Quick ‘n’ Easy Vegan Piquant Pea & Leek Soup

Winter is coming, and with it, the season of hearty casseroles and comforting soups. Despite it still being November, as I type this, we are on day two of non-stop snowfall; every roof in the village is white, and my once-productive vegetable garden, which kept us fed throughout the summer and early autumn, now sleeps under a fluffy white blanket.

Picture me sitting in front of a roaring fire, cupping a steaming bowl of pea soup in my (asbestos-lined) hands, while outside the wind blows a gale, and the snow falls in drifts.

(It’s a much more romantic image than my reality of modern radiators, and the sound of the occasional horse-drawn cart being driven along a slushy road!)

Nevertheless, this is the kind of soup that makes you want to curl up in front of a fire, and wrap yourself in winter cosiness, so I say do it!

Not least because this is a total dump soup… dump the ingredients into a pan; cook, blitz, done. Told you it was easy. Go and make some right now, I promise you won’t regret it!
